The average cost of a dozen eggs in U.S. cities hit a record $4.95 last month, surpassing the previous high of $4.82 set in January 2023, according to the Bureau of Labor Statistics. Prices were $4.15 in December.

The rise is linked to a bird flu outbreak that has led to the deaths of over 100 million egg-laying hens. Experts warned prices could climb another 20% in 2025, as farms must cull entire flocks when the virus is detected.

Additionally, states like Oregon, Washington, and California mandate cage-free eggs, further raising costs. Last month, egg prices jumped 15.2%, with some cartons in California exceeding $9. The Bureau of Labor Statistics noted this was the largest monthly increase since June 2015, driving two-thirds of the food-at-home price rise.

New York shut live bird markets after detecting seven bird flu cases. Gov. Kathy Hochul emphasized proactive health measures. Overall, food prices rose 0.4% in January, with meats, poultry, and fish up 1.9%.
